  • 1/2 cup unsalted butter (very soft)
  • 1/2 cup light brown sugar (packed)
  • 1/4 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 1/2 cups old-fashioned whole rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a baking sheet with a Silpat or cooking spray.
  2. In a large mixing bowl, combine the egg, softened butter, brown sugar, granulated sugar, and vanilla extract. Mix thoroughly until smooth.
  3. Add the rolled oats, flour, baking soda, and salt. Stir until well combined.
  4. Gently fold in the chocolate chips until evenly distributed.
  5. Using a cookie scoop, form mounds of dough on the prepared baking sheet with about 2 inches of space between each mound.
  6. Bake for 10 to 13 minutes; adjust time based on desired softness. The edges should be set while the tops remain glossy.
  7. Once out of the oven, add extra chocolate chips on top of each cookie and let cool for about 10 minutes before serving.
