  • ½ cup whole milk
  • ½ cup Parmesan cheese, grated
  • 1 teaspoon black pepper
  • ½ teaspoon salt (adjust to taste)
  • 2 large egg yolks, whisked
  • 2 tablespoons unsalted butter
  • ¼ cup extra Parmesan cheese, grated
  • 1 tablespoon fresh parsley, chopped
  • Cracked black pepper, to taste

Instructions

  1. Fill a large pot with water and add 1 teaspoon of salt. Bring it to a boil over high heat.
  2. Once boiling, add the ravioli gently into the pot. Cook according to package instructions until they are tender but firm.
  3. While the ravioli cooks, heat a skillet over medium heat. Add diced turkey strips and cook until browned.
  4. Stir in minced garlic and cook for an additional minute until fragrant.
  5. Reduce heat to low and pour in heavy cream and whole milk into the skillet with turkey. Stir in grated Parmesan cheese, black pepper, and salt. Allow it to simmer gently for about 3-5 minutes until slightly thickened.
  6. In a separate bowl, whisk together egg yolks until smooth.
  7. Remove the skillet from heat and slowly stir in the egg yolks into the sauce mixture. Mix quickly to avoid scrambling eggs.
  8. Drain cooked ravioli and add them directly into the sauce mixture. Toss gently until all ravioli are well-coated with sauce.
  9. Add butter to enhance richness; stir until melted through.
