  • 2 teaspoons minced fresh garlic
  • 1 teaspoon minced fresh ginger
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons toasted sesame oil
  • 2 tablespoons red curry paste
  • 1/2 cup full-fat coconut milk
  • 1/2 cup water
  • 5 cups chopped bok choy
  • 20 frozen chicken and vegetable or beef and vegetable dumplings
  • 3 tablespoons chopped cilantro
  • 1/4 cup thinly sliced green onion
  • 2 teaspoons toasted sesame seeds
  • chili crunch oil (optional)

Instructions

  1. In a mixing bowl, whisk together garlic, ginger, soy sauce, rice vinegar, sesame oil, red curry paste, coconut milk, and water until smooth.
  2. In a large skillet over medium heat, sauté bok choy for about 3-4 minutes until wilted but still bright green.
  3. Arrange frozen dumplings on top of the sautéed bok choy.
  4. Pour the prepared sauce over the dumplings and bok choy to cover evenly.
  5. Cover and simmer for 15-20 minutes until dumplings are cooked through.
  6. Garnish with cilantro, green onions, and sesame seeds before serving.
