- 2 cloves garlic, minced
- 2 cups broccoli florets
- 1 red bell pepper, trimmed and cut into 1-inch pieces
- 2 cups fresh pineapple, cubed
- 1/4 cup lower sodium soy sauce
- 1/4 cup pineapple juice
- 1 tsp sesame oil
- 3 Tbsp honey
- 2 tsp fresh grated ginger
- Green onions (optional)
- Sesame seeds (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then sauté until lightly browned (4-5 minutes). Add minced garlic and sauté until fragrant (30 seconds).
- Stir in broccoli, red bell pepper, and cubed pineapple. Cook until vegetables are tender and chicken is cooked through (about 5 minutes).
- In a bowl, whisk together soy sauce, pineapple juice, sesame oil, honey, and grated ginger. Pour over the chicken mixture in the skillet, bringing it to a simmer.
- Remove from heat and garnish with green onions and sesame seeds if desired before serving.
