Ingredients
- 500g chicken thigh (cut into bite-sized pieces)
- 1 large head of broccoli (cut into small florets)
- 1 1/4 cups long-grain white rice (uncooked)
- 2 cups chicken broth
- 2 cups milk
- 2 cups shredded mozzarella or cheddar cheese
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 1 onion (finely chopped)
- 2 garlic cloves (minced)
- 2.5 tbsp flour (or 1 ½ tbsp cornflour/cornstarch)
- 1 tsp dried thyme (or other herb of choice)
- Salt and pepper to taste
Instructions
- In a large pot, melt butter and heat olive oil over high heat. Sauté chopped onion and minced garlic for about 1 minute until fragrant. Add chicken pieces and cook until browned.
- Lower the heat to medium and whisk in flour to create a roux. Gradually add milk while stirring continuously until smooth.
- Pour in chicken broth, uncooked rice, dried thyme, salt, and pepper; stir well. Bring to a simmer before covering.
- Cook on medium-low heat for approximately 12 minutes.
- Carefully add broccoli florets; cover again and cook for an additional 3 minutes until just tender.
- Stir in half of the shredded cheese before smoothing the top and adding the remaining cheese.
- Broil until cheese is melted or cover with the lid on low heat until melted.
- Serve hot, garnished with parsley if desired.
