  • 500g chicken thigh (cut into bite-sized pieces)
  • 1 large head of broccoli (cut into small florets)
  • 1 1/4 cups long-grain white rice (uncooked)
  • 2 cups chicken broth
  • 2 cups milk
  • 2 cups shredded mozzarella or cheddar cheese
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 onion (finely chopped)
  • 2 garlic cloves (minced)
  • 2.5 tbsp flour (or 1 ½ tbsp cornflour/cornstarch)
  • 1 tsp dried thyme (or other herb of choice)
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt butter and heat olive oil over high heat. Sauté chopped onion and minced garlic for about 1 minute until fragrant. Add chicken pieces and cook until browned.
  2. Lower the heat to medium and whisk in flour to create a roux. Gradually add milk while stirring continuously until smooth.
  3. Pour in chicken broth, uncooked rice, dried thyme, salt, and pepper; stir well. Bring to a simmer before covering.
  4. Cook on medium-low heat for approximately 12 minutes.
  5. Carefully add broccoli florets; cover again and cook for an additional 3 minutes until just tender.
  6. Stir in half of the shredded cheese before smoothing the top and adding the remaining cheese.
  7. Broil until cheese is melted or cover with the lid on low heat until melted.
  8. Serve hot, garnished with parsley if desired.
