  • 1 tbsp Olive Oil
  • 1/2 tsp Dried Thyme
  • 1 large Sweet Onion (finely chopped)
  • 4 cloves Garlic (finely chopped)
  • 1 cup Carrots (shredded or chopped)
  • 1 cup Celery (finely chopped)
  • 1 cup Frozen Peas
  • 1 cup uncooked Orzo
  • 2 cups Chicken or Veg Broth
  • 1 cup Rotisserie Chicken (roughly chopped or shredded)
  • 1 cup Milk
  • 1/2 cup Parmigiano (grated)
  • Salt and Pepper

Instructions

  1. In a heavy-bottomed pan, heat olive oil and 2 tbsp butter over medium heat. Sauté finely chopped onion with a pinch of salt until softened (about 4–5 minutes).
  2. Add minced garlic, carrots, celery, frozen peas, thyme, and another pinch of salt; cook until fragrant.
  3. Stir in uncooked orzo and broth. Bring to a simmer, cover, and cook for approximately 6 minutes.
  4. Incorporate shredded chicken and milk into the mixture. Stir thoroughly; cover again and cook for an additional 4 minutes until pasta is al dente.
  5. Adjust consistency by leaving the lid off if too watery. Fold in remaining butter and grated cheese; season with salt and pepper to taste.
