  • 1/2 teaspoon dried oregano
  • Black pepper
  • 3 jalapeños, seeded and chopped
  • 1 cup fresh cilantro leaves
  • 2 green onions, chopped (green parts only)
  • 2 cloves garlic
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a mixing bowl, combine garlic, soy sauce, lime juice, olive oil, cumin, paprika, oregano, and black pepper to create the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes or up to overnight.
  3. Preheat grill to medium-high heat or oven to 400°F (200°C).
  4. Grill or bake the chicken for about 25-35 minutes until fully cooked.
  5. For the creamy green sauce, blend together jalapeños, cilantro, green onions, garlic, mayonnaise, Greek yogurt, lime juice, salt, black pepper, and olive oil until smooth.
  6. Allow chicken to rest briefly before slicing. Serve with the creamy green sauce.
