  • 6 boneless beef loin chops (about 1" thick)
  • Salt and pepper
  • 1 tablespoon olive oil
  • 1 cup pineapple juice
  • 1/4 cup barbecue sauce
  • 1/4 cup brown sugar
  • 1 teaspoon sea salt
  • 1 teaspoon ground ginger
  • 1 teaspoon garlic powder
  • 1 teaspoon dried minced onions
  • 1 cup pineapple tidbits (for garnish)

Instructions

  1. Season both sides of the beef chops with salt and pepper.
  2. In a mixing bowl, combine pineapple juice, barbecue sauce, brown sugar, sea salt, ground ginger, garlic powder, and dried minced onions. Mix well.
  3. Heat olive oil in a cast iron skillet over medium-high heat. Sear the seasoned beef chops for about 2 minutes on each side until golden brown.
  4. Transfer seared chops to a platter and cover with foil.
  5. Pour the marinade into the same skillet and deglaze by stirring up any browned bits. Bring to a boil, then reduce heat to medium.
  6. Return the beef chops to the skillet and simmer in the sauce for about 8 to 10 minutes until they reach an internal temperature of at least 145°F.
  7. Stir in pineapple tidbits just before serving.
