- 9 oz firm tofu
- 2 carrots
- 5 oz white cabbage
- 10–12 shiitake mushrooms
- 12 rice paper sheets
- 1 tablespoon sesame oil
- 1 teaspoon five-spice powder
- 1 tablespoon tamari or soy sauce
- 2 oz vermicelli or glass noodles
- 1 tablespoon toasted sesame oil
- 2 tablespoons soy sauce
- 1 teaspoon sesame seeds
- 1/2 tablespoon rice vinegar
- 2 teaspoons maple syrup
Instructions
- Press excess water from the tofu and crumble into a bowl.
- Finely shred the cabbage and carrots; mix with crumbled tofu.
- Chop shiitake mushrooms and add them to the mixture along with minced garlic and ginger.
- Season with sesame oil, tamari or soy sauce, and five-spice powder; cook for 12-15 minutes until tender.
- Soak vermicelli noodles in hot water until softened, then combine with filling.
- Soak rice paper sheets briefly in lukewarm water, fill with filling mixture, and roll tightly.
- Fry in hot oil until golden brown on both sides.
