Ingredients

  • 9 oz firm tofu
  • 2 carrots
  • 5 oz white cabbage
  • 1012 shiitake mushrooms
  • 12 rice paper sheets
  • 1 tablespoon sesame oil
  • 1 teaspoon five-spice powder
  • 1 tablespoon tamari or soy sauce
  • 2 oz vermicelli or glass noodles
  • 1 tablespoon toasted sesame oil
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame seeds
  • 1/2 tablespoon rice vinegar
  • 2 teaspoons maple syrup

Instructions

  1. Press excess water from the tofu and crumble into a bowl.
  2. Finely shred the cabbage and carrots; mix with crumbled tofu.
  3. Chop shiitake mushrooms and add them to the mixture along with minced garlic and ginger.
  4. Season with sesame oil, tamari or soy sauce, and five-spice powder; cook for 12-15 minutes until tender.
  5. Soak vermicelli noodles in hot water until softened, then combine with filling.
  6. Soak rice paper sheets briefly in lukewarm water, fill with filling mixture, and roll tightly.
  7. Fry in hot oil until golden brown on both sides.
