  • 1 onion (diced)
  • 5 cloves garlic (minced)
  • 1 jar (16 oz) roasted red peppers
  • 6 oz goat cheese
  • 1 tablespoon Italian seasoning
  • 1 pound pasta of choice (penne recommended)
  • Kosher salt and pepper to taste
  • Optional: fresh basil for garnish

Instructions

  1. In a saucepan over medium heat, melt the butter. Add diced onion, kosher salt, pepper, and crushed red pepper flakes. Sauté for about 5 minutes until the onions are soft.
  2. Stir in minced garlic and cook for an additional minute.
  3. Add roasted red peppers (with liquid), goat cheese, and Italian seasoning to the saucepan. Cook for 5–7 minutes until well combined.
  4. Use an immersion blender to blend the sauce until smooth.
  5. Cook your chosen pasta according to package instructions until al dente. Drain and return to the pot.
  6. Pour the sauce over the pasta and toss gently over medium heat for 1–2 minutes. Adjust seasoning as needed.
