  • 3½ cups bread flour

  • 2 tablespoons finely chopped rosemary
  • 1½ cups cubed Parmesan

Instructions

  1. In a bowl, combine water and yeast. Let sit for 10-15 minutes until foamy.
  2. In a separate large mixing bowl, whisk together flour, salt, and rosemary. Allow to sit for 10 minutes.
  3. Add the yeast mixture to the dry ingredients and mix until just combined; the dough will be slightly sticky.
  4. Cover with plastic wrap or a towel and let rise in a warm area for about 8-10 hours until doubled in size.
  5. Turn dough onto a floured surface, shape into a rectangle, and fold in Parmesan cubes. Form into a log shape.
  6. Dust with flour, cover tightly with plastic wrap, and refrigerate overnight (up to 48 hours).
  7. Preheat oven to 450°F (232°C) with your Dutch oven inside.
  8. Transfer dough onto parchment paper; score the top with a knife.
  9. Carefully place dough into the preheated Dutch oven, cover, and bake for 30 minutes.
  10. Remove lid and bake for an additional 15-20 minutes until golden brown.
  11. Cool on a wire rack for at least an hour before slicing.
