- 2 tablespoons avocado or canola oil, divided
- 1 tablespoon soy sauce for marinade
- 1 teaspoon cornstarch for marinade
- ½ cup low-sodium soy sauce
- ¼ cup plant-based oyster sauce
- 2 teaspoons toasted sesame oil
- 1 tablespoon brown sugar, packed
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch for sauce
- 2 green onions, thinly sliced (optional garnish)
- 1 tablespoon toasted sesame seeds (optional garnish)
Instructions
- Prepare the stir-fry sauce by whisking together soy sauce, oyster sauce, sesame oil, brown sugar, rice vinegar, and cornstarch in a bowl.
- Marinate the sliced beef with soy sauce and cornstarch; let rest while cooking.
- Boil noodles according to package instructions; drain and toss with sesame oil.
- Sear marinated beef in a hot wok until browned; remove from the pan.
- Stir-fry onions first before adding broccoli and carrots; cook until tender-crisp.
- Add garlic, ginger, and bell peppers; stir-fry until fragrant.
