  • 1 lb (450g) boneless beef sirloin or flank steak, thinly sliced
  • 1 medium head of broccoli, cut into bite-sized florets
  • 2 medium carrots, julienned or thinly sliced
  • 1 large bell pepper, seeded and thinly sliced
  • 1 medium onion, thinly sliced
  • 4 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 2 tablespoons avocado or canola oil, divided
  • 1 tablespoon soy sauce for marinade
  • 1 teaspoon cornstarch for marinade
  • ½ cup low-sodium soy sauce
  • ¼ cup plant-based oyster sauce
  • 2 teaspoons toasted sesame oil
  • 1 tablespoon brown sugar, packed
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch for sauce
  • 2 green onions, thinly sliced (optional garnish)
  • 1 tablespoon toasted sesame seeds (optional garnish)

Instructions

  1. Prepare the stir-fry sauce by whisking together soy sauce, oyster sauce, sesame oil, brown sugar, rice vinegar, and cornstarch in a bowl.
  2. Marinate the sliced beef with soy sauce and cornstarch; let rest while cooking.
  3. Boil noodles according to package instructions; drain and toss with sesame oil.
  4. Sear marinated beef in a hot wok until browned; remove from the pan.
  5. Stir-fry onions first before adding broccoli and carrots; cook until tender-crisp.
  6. Add garlic, ginger, and bell peppers; stir-fry until fragrant.
  7. Pour the prepared sauce over vegetables; let bubble until thickened.
  8. Combine cooked noodles and seared beef back into the pan; toss to coat evenly.
  9. Serve immediately garnished with green onions and sesame seeds.
