  • 1 lb. lean ground beef
  • 1 medium yellow bell pepper (diced)
  • 1 yellow onion (diced)
  • 8 oz. bella mushrooms (finely diced)
  • 1/2 cup shredded Colby jack cheese
  • 1 can GRANDS homestyle buttermilk biscuits
  • 1 8-oz. can tomato sauce
  • 1/2 cup sugar-free ketchup
  • 2 cloves garlic (minced)
  • 2 Tbsp Worcestershire sauce
  • 1 Tbsp brown sugar
  • 2 tsp dry mustard
  • 1 tsp onion powder

Instructions

  1. Preheat the oven to 350°F and spray an 8×11” baking dish with cooking spray.
  2. In a large skillet over medium heat, cook ground beef until no longer pink; transfer to a mixing bowl.
  3. In the same skillet, sauté diced bell pepper, onion, and mushrooms until tender. Combine with beef.
  4. In a separate bowl, mix tomato sauce, ketchup, minced garlic, Worcestershire sauce, brown sugar, dry mustard, and onion powder. Stir into beef mixture.
  5. Pour mixture into prepared baking dish and sprinkle cheese on top.
  6. Cut each biscuit into four pieces and arrange over the meat mixture.
  7. Bake for 25 minutes or until biscuits are golden brown.
