  • 1 lb carrots, peeled and cut into thick rounds
  • 1 tbsp olive oil
  • 2 tbsp grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Boil the carrot rounds in salted water for 10–12 minutes until fork-tender. Drain and cool slightly.
  3. Arrange the boiled carrot rounds on the baking sheet and gently smash each round with the bottom of a glass or measuring cup.
  4. Drizzle olive oil over the smashed carrots, season with garlic powder, smoked paprika, salt, black pepper, and sprinkle grated Parmesan on top.
  5. Roast for 20–25 minutes until crispy and golden brown, flipping halfway through.
  6. Garnish with fresh parsley before serving hot.
