- 430 g bread flour
- 5 g salt
- 1 stick unsalted butter (room temperature)
- 2 cups frozen raspberries
- 4 tablespoons unsalted butter (for frosting)
- 3 oz cream cheese (softened)
- 2 tablespoons lemon juice
- 2 cups powdered sugar
Instructions
- In a mixing bowl, combine milk and sourdough starter; mix well. Add sugar and egg, stirring until smooth.
- Gradually add bread flour and salt; knead in room-temperature butter until fully combined.
- Cover the bowl with plastic wrap or a towel and let the dough rise in a warm area until doubled in size (about 1-2 hours).
- For the filling, combine frozen raspberries, granulated sugar, and cornstarch in another bowl; toss gently to coat.
- Once risen, punch down the dough and roll it out into a rectangle about ¼ inch thick on a floured surface.
- Spread the raspberry filling evenly over the dough. Roll tightly from one edge into a log shape and cut into approximately 12 pieces.
- Place on a lined baking sheet, cover again, and let rise for another hour until puffy.
- Preheat oven to 350°F (175°C) and bake for 25-30 minutes or until golden brown.
- For frosting, beat together softened butter and cream cheese until creamy; add lemon juice followed by powdered sugar until smooth.
