  • 60 g active sourdough starter
  • 70 g granulated sugar (plus extra for filling)
  • 1 large egg
  • 430 g bread flour
  • 5 g salt
  • 1 stick unsalted butter (room temperature)
  • 2 cups frozen raspberries
  • 4 tablespoons unsalted butter (for frosting)
  • 3 oz cream cheese (softened)
  • 2 tablespoons lemon juice
  • 2 cups powdered sugar

Instructions

  1. In a mixing bowl, combine milk and sourdough starter; mix well. Add sugar and egg, stirring until smooth.
  2. Gradually add bread flour and salt; knead in room-temperature butter until fully combined.
  3. Cover the bowl with plastic wrap or a towel and let the dough rise in a warm area until doubled in size (about 1-2 hours).
  4. For the filling, combine frozen raspberries, granulated sugar, and cornstarch in another bowl; toss gently to coat.
  5. Once risen, punch down the dough and roll it out into a rectangle about ¼ inch thick on a floured surface.
  6. Spread the raspberry filling evenly over the dough. Roll tightly from one edge into a log shape and cut into approximately 12 pieces.
  7. Place on a lined baking sheet, cover again, and let rise for another hour until puffy.
  8. Preheat oven to 350°F (175°C) and bake for 25-30 minutes or until golden brown.
  9. For frosting, beat together softened butter and cream cheese until creamy; add lemon juice followed by powdered sugar until smooth.
  10. Drizzle the frosting over slightly cooled rolls before serving.
