- 6 crispy chicken tenders, cooked according to package directions
- 6 flour tortillas
- 6 romaine lettuce leaves
- 2 medium tomatoes, cut into slices
- 1 pkg. frozen corn, thawed
- 1 Tbsp. oil
- 1 can black beans, drained and rinsed
- 1 cup shredded cheddar cheese
- 1 1/2 cups mayonnaise
- 1/2 cup salsa
- 1/2 cup milk
- 3 Tbsp. taco seasoning
- 1 Tbsp. cumin
Instructions
- Preheat your oven according to the package directions for the crispy chicken tenders.
- In a small mixing bowl, combine mayonnaise, milk, salsa, taco seasoning, and cumin. Mix well until smooth. Set aside.
- In a non-stick skillet, add oil and thawed corn. Cook over medium heat until the corn turns golden brown. Remove from heat and set aside.
- Once the chicken is baked, remove it from the oven and slice into small strips for easy wrapping.
- Start assembling your wraps: Lay out a tortilla on a flat surface. Spread a couple of tablespoons of southwest dressing on the lower half of the tortilla. Layer with romaine lettuce, sliced tomatoes, black beans, cooked corn, and chicken strips. Drizzle more southwest dressing on top.
- Roll up each tortilla tightly. Cut in half if desired. Serve with extra southwest dressing on the side.
