Ingredients

Scale
  • 4 cups sweet potatoes, cubed
  • 2 tablespoons olive oil
  • 1 pound ground beef (or turkey, chicken, or black beans)
  • 2 tablespoons taco seasoning
  • 1 cup pico de gallo
  • 1 cup guacamole
  • ½ cup sour cream (or Greek yogurt)

Instructions

  1. Preheat your oven to 425°F (220°C). Toss cubed sweet potatoes with olive oil, smoked paprika, salt, and pepper in a mixing bowl.
  2. Spread seasoned sweet potatoes on a baking sheet and roast for about 25-30 minutes until tender and caramelized.
  3. While the sweet potatoes roast, heat a skillet over medium heat and cook the ground beef (or chosen protein) until browned. Drain excess fat if necessary, then stir in taco seasoning with a splash of water.
  4. Assemble the bowls by adding roasted sweet potatoes as the base, followed by cooked protein, pico de gallo, guacamole, sour cream, and any additional toppings.
