  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can black beans (15 oz)
  • 1 cup corn (frozen or canned)
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • ½ cup salsa
  • 2 tablespoons olive oil

Instructions

  1. In a medium saucepan, combine the rice and water or chicken broth. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes until tender.
  2. In a large skillet over medium heat, add olive oil and ground meat. Season with salt, pepper, and taco seasoning; cook until browned (5–7 minutes).
  3. Stir in drained black beans and corn; cook for an additional 2–3 minutes until heated through.
  4. To serve, layer cooked rice in bowls and top with the meat mixture, diced tomatoes, lettuce, and cheese.
  5. Finish with salsa and optional garnishes like cilantro and lime wedges before serving.
