  • 1 pound lean ground beef
  • ½ small onion (chopped)
  • 2 cloves garlic (minced)
  • 16 corn tortillas
  • 1 tablespoon vegetable oil (plus more for frying)
  • 1 ½ teaspoon chili powder
  • 1 teaspoon kosher salt (plus more as needed)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon ground cumin
  • Mexican crema
  • Thinly shredded lettuce
  • Salsa
  • Chopped cilantro
  • Queso fresco or cotija cheese

Instructions

  1. Boil the diced potatoes in salted water for 20 minutes until fork-tender; drain and mash.
  2. In a skillet, heat oil over medium-high heat. Sauté chopped onion and garlic until fragrant.
  3. Add ground beef to the skillet and season with chili powder, salt, garlic powder, onion powder, black pepper, and cumin; cook until browned.
  4. Mix the mashed potatoes into the beef mixture; adjust seasoning as needed.
  5. Warm tortillas in a damp paper towel or on a skillet until pliable.
  6. Fill each tortilla with 2-3 tablespoons of the filling and fold to form tacos.
  7. Fry in hot oil until golden brown and crispy; drain on paper towels.
