Ingredients
- 4 boneless, skinless chicken breasts
- 3 tablespoons honey
- 2 tablespoons lime juice
- 1 tablespoon lime zest
- 2 cloves garlic (minced)
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 1 cup jasmine or basmati rice
- 2 cups chicken broth
- 2 avocados (diced)
- 1 small red onion (finely chopped)
- 1/4 cup fresh cilantro (chopped)
- 1 tablespoon olive oil

Instructions
- In a mixing bowl, combine honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper. Add the chicken breasts and coat well. Let marinate for at least 30 minutes.
