  • 4 boneless, skinless chicken breasts
  • 3 tablespoons honey
  • 2 tablespoons lime juice
  • 1 tablespoon lime zest
  • 2 cloves garlic (minced)
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 cup jasmine or basmati rice
  • 2 cups chicken broth
  • 2 avocados (diced)
  • 1 small red onion (finely chopped)
  • 1/4 cup fresh cilantro (chopped)
  • 1 tablespoon olive oil
  • Lime wedges for garnish

Instructions

  1. In a mixing bowl, combine honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper. Add the chicken breasts and coat well. Let marinate for at least 30 minutes.
  2. Bring chicken broth to a boil in a pot. Add rice, reduce heat to low, cover, and simmer until cooked through.
  3. Heat a grill pan over medium-high heat. Remove chicken from marinade and grill for about 6–7 minutes per side or until fully cooked. Allow resting before slicing.
  4. On a plate or platter, layer rice first. Top with sliced grilled chicken, diced avocado, finely chopped red onion, drizzle with olive oil, and sprinkle cilantro.
  5. Serve with lime wedges on the side.
