  • 3/4 cup low-sodium soy sauce
  • 1/2 cup water
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon minced garlic
  • 1 pound boneless skinless chicken breasts
  • 12 ounces refrigerated stir-fry vegetables (steamed)
  • 3 cups cooked brown or white rice

Instructions

  1. Preheat your oven to 350°F and prepare a 9×13-inch baking pan with non-stick spray.
  2. In a small saucepan, combine soy sauce, water, brown sugar, ginger, and garlic; bring to a boil. Mix cornstarch and water in another bowl until smooth, then add to the boiling sauce until thickened.
  3. Place chicken in the baking pan and surround it with steamed vegetables. Pour one cup of teriyaki sauce over the top and cover with foil.
  4. Bake for 30 minutes until chicken reaches an internal temperature of 165°F. Remove foil, shred chicken, and mix in cooked rice along with most of the remaining sauce.
  5. Return to the oven for an additional 10 minutes before serving.
