- 1/4 cup brown sugar

- 1/2 teaspoon minced garlic
- 1 pound boneless skinless chicken breasts
- 12 ounces refrigerated stir-fry vegetables (steamed)
- 3 cups cooked brown or white rice
Instructions
- Preheat your oven to 350°F and prepare a 9×13-inch baking pan with non-stick spray.
- In a small saucepan, combine soy sauce, water, brown sugar, ginger, and garlic; bring to a boil. Mix cornstarch and water in another bowl until smooth, then add to the boiling sauce until thickened.

- Bake for 30 minutes until chicken reaches an internal temperature of 165°F. Remove foil, shred chicken, and mix in cooked rice along with most of the remaining sauce.
