  • 2 pounds boneless, skinless chicken breasts (cut in bite-size pieces)
  • salt and pepper (to taste)
  • 8 cups Romaine lettuce (chopped)
  • 2 Roma tomatoes (diced)
  • 1 cup corn kernels (fresh or frozen)
  • 4 green onions (sliced)
  • 1 can (15 ounces) black beans (drained then rinsed)
  • 1 cup ranch dressing
  • 2 tablespoons mild taco seasoning
  • 1/2 cup mild cheddar cheese (shredded)
  • 1/4 cup cilantro (chopped)
  • juice of 1/2 of a lime
  • 1 cup tortilla chips (crushed)

Instructions

  1. Season the bite-sized chicken pieces with salt, pepper, and taco seasoning.
  2. Heat a large skillet over medium heat. Add the seasoned chicken to the skillet. Cook until fully cooked through, about 6–8 minutes. Remove from heat.
  3. While the chicken cooks, chop the romaine lettuce into bite-sized pieces. Dice the Roma tomatoes, slice the green onions, and prepare corn if using fresh.
  4. In a large mixing bowl, combine chopped lettuce, tomatoes, corn, green onions, black beans, cooked chicken, cheddar cheese, cilantro, and lime juice. Toss everything gently to combine all ingredients evenly.
