Ingredients
- 2 pounds boneless, skinless chicken breasts (cut in bite-size pieces)
- salt and pepper (to taste)
- 8 cups Romaine lettuce (chopped)
- 2 Roma tomatoes (diced)
- 1 cup corn kernels (fresh or frozen)
- 4 green onions (sliced)
- 1 can (15 ounces) black beans (drained then rinsed)
- 1 cup ranch dressing
- 2 tablespoons mild taco seasoning
- 1/2 cup mild cheddar cheese (shredded)
- 1/4 cup cilantro (chopped)
- juice of 1/2 of a lime
- 1 cup tortilla chips (crushed)
Instructions
- Season the bite-sized chicken pieces with salt, pepper, and taco seasoning.
- Heat a large skillet over medium heat. Add the seasoned chicken to the skillet. Cook until fully cooked through, about 6–8 minutes. Remove from heat.
- While the chicken cooks, chop the romaine lettuce into bite-sized pieces. Dice the Roma tomatoes, slice the green onions, and prepare corn if using fresh.
- In a large mixing bowl, combine chopped lettuce, tomatoes, corn, green onions, black beans, cooked chicken, cheddar cheese, cilantro, and lime juice. Toss everything gently to combine all ingredients evenly.
