  • 1 pint grape tomatoes, halved
  • 1 cup slivered almonds
  • 1 cup shredded Swiss cheese
  • 1/2 cup finely shredded parmesan cheese
  • 1 1/2 cups croutons
  • 3/4 cup light olive oil
  • 1/3 cup fresh lemon juice
  • 2 garlic cloves, minced
  • 1 tsp dijon mustard
  • 1 1/2 tsp honey
  • 3/4 tsp salt, or to taste
  • 1/2 tsp freshly ground black pepper, to taste

Instructions

  1. For the dressing: Combine olive oil, lemon juice, minced garlic, dijon mustard, honey, salt, and pepper in a jar. Seal tightly and shake until well combined.
  2. Preheat oven to 350°F (175°C) and toast slivered almonds on a baking sheet for 6-10 minutes until golden brown.
  3. Rinse romaine lettuce thoroughly and dry with a salad spinner. Place in a large bowl.
  4. Add toasted almonds, halved grape tomatoes, Swiss cheese, parmesan cheese, and croutons to the bowl of lettuce.
  5. Shake the dressing again before pouring over the salad and toss gently to combine.
