  • Juice of 2 lemons
  • 1/4 cup olive oil
  • 1/4 cup unsalted cashews
  • 1/3 cup nutritional yeast
  • 1 teaspoon salt
  • 2 tablespoons rice vinegar

Instructions

  1. Wash and chop the cabbage, cucumber, chives, and green onions into confetti-sized pieces. Place in a large mixing bowl.
  2. In a blender, combine lemon juice, olive oil, rice vinegar, garlic, shallot, basil, spinach, cashews, nutritional yeast, and salt. Blend until smooth.
