Ingredients
- 18 ounces cheese or vegan tortellini
- 2 cups halved cherry tomatoes
- 1 can (14-ounce) artichoke hearts, drained and chopped
- 1 cup cooked white beans
- ½ cup thinly sliced red onion
- 5 chopped pepperoncini
- 2 cups fresh arugula
- 1 cup torn fresh basil
- Italian dressing
Instructions
- Cook the tortellini in a large pot of salted boiling water until al dente. Drain and cool.
