Description

Vegetable Chickpea Fritters are a deliciously crispy and nutritious dish that brings together the wholesome goodness of fresh vegetables and protein-packed chickpeas.   • 1 cup shredded zucchini
  • 15 oz can chickpeas, drained and patted dry
  • 1 cup shredded carrots
  • 2 green onions, sliced
  • 1/4 cup all-purpose flour
  • 1/4 cup panko breadcrumbs
  • 1 large egg
  • 2 tablespoons chopped basil
  • 2 tablespoons chopped parsley
  • 1/2 teaspoon garlic powder
  • Kosher salt and black pepper, to taste
  • 2 tablespoons olive oil or avocado oil, for cooking
  • 1/2 cup plain Greek yogurt
  • 2 teaspoons fresh lemon juice
  • 1/2 teaspoon lemon zest
  • 1 tablespoon chopped basil
  • 1 tablespoon chopped parsley
  • 1 small clove garlic, minced
  • Kosher salt, to taste

Instructions

  1. Place shredded zucchini in a colander, sprinkle with salt, and let sit for 10 minutes to remove excess moisture.
  2. In a large bowl, smash chickpeas until mostly smooth but still slightly chunky.
  3. Mix in the drained zucchini, shredded carrots, green onions, flour, panko, egg, herbs, garlic powder, salt, and pepper until well combined.
  4. Form the mixture into patties about 3 inches wide.
  5. Heat olive oil in a skillet over medium-high heat and cook fritters for about 3 to 5 minutes on each side until golden brown and crispy.
  6. In a small bowl, combine Greek yogurt with lemon juice, lemon zest, herbs, minced garlic, and salt. Stir until smooth.
  7. Serve warm fritters alongside the lemon herb yogurt sauce for dipping.
