Ingredients

  • 7 cups thinly sliced russet potatoes
  • 1 lb ground beef (or turkey)
  • 6 cups chopped kale leaves
  • 4 cups chicken broth
  • 1 cup heavy whipping cream
  • 1 large egg, beaten
  • 1.5 cups shredded Parmesan cheese
  • 1 small white onion, peeled and diced
  • 2 tbsp garlic paste
  • 1/2 cup flour
  • salt & pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Spread the sliced potatoes evenly in a 9×13 inch baking dish and layer the cooked ground beef on top.
  2. In a skillet over medium heat, sauté diced onions and garlic paste until softened. Add chopped kale and stir until just wilted.
  3. Sprinkle flour over the kale mixture, stirring for about a minute before gradually adding chicken broth while whisking until thickened. Stir in the heavy cream.
  4. Temper the beaten egg by mixing in small amounts of hot liquid from the skillet, then combine back into the skillet.
  5. Mix half of the Parmesan cheese into the sauce until melted and pour it over the layered potatoes.
  6. Cover with foil and bake for 50-60 minutes; remove foil, add remaining cheese, and bake uncovered for another 25-30 minutes.
  7. Let cool for about 10 minutes before serving.
