- ½ cup mayonnaise
- ¼ cup Thai sweet chili sauce
- 1 tablespoon chili garlic sauce
- 1 pound medium shrimp (peeled and deveined)
- 1 egg (beaten)
- 1 cup buttermilk
- ½ cup all-purpose flour
- ½ cup panko breadcrumbs
- Vegetable oil for frying
Instructions
- In a small bowl, mix mayonnaise, Thai sweet chili sauce, and chili garlic sauce; set aside.
- In another bowl, whisk together the beaten egg and buttermilk.
- In a third bowl, combine flour, panko breadcrumbs, salt, black pepper, onion powder, garlic powder, and paprika.
- Bread each shrimp: coat with flour mixture, then egg mixture, followed by another coating of flour mixture.
- Refrigerate the coated shrimp for 20–30 minutes to help the breading adhere during frying.
- Heat vegetable oil in a skillet until it reaches about 350°F (175°C).
- Fry shrimp in batches for about three minutes or until golden brown; drain on paper towels.
- Toss cooked shrimp in the prepared sauce before serving.
