  • ½ cup mayonnaise
  • ¼ cup Thai sweet chili sauce
  • 1 tablespoon chili garlic sauce
  • 1 pound medium shrimp (peeled and deveined)
  • 1 egg (beaten)
  • 1 cup buttermilk
  • ½ cup all-purpose flour
  • ½ cup panko breadcrumbs
  • Vegetable oil for frying

Instructions

  1. In a small bowl, mix mayonnaise, Thai sweet chili sauce, and chili garlic sauce; set aside.
  2. In another bowl, whisk together the beaten egg and buttermilk.
  3. In a third bowl, combine flour, panko breadcrumbs, salt, black pepper, onion powder, garlic powder, and paprika.
  4. Bread each shrimp: coat with flour mixture, then egg mixture, followed by another coating of flour mixture.
  5. Refrigerate the coated shrimp for 20–30 minutes to help the breading adhere during frying.
  6. Heat vegetable oil in a skillet until it reaches about 350°F (175°C).
  7. Fry shrimp in batches for about three minutes or until golden brown; drain on paper towels.
  8. Toss cooked shrimp in the prepared sauce before serving.
