  • 1 tablespoon olive oil
  • 1/2 cup ketchup
  • 1/4 cup honey
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Worcestershire sauce alternative (vegan)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cayenne pepper
  • cooked rice
  • pineapple chunks

Instructions

  1. To prepare the BBQ sauce, mix ketchup, honey, apple cider vinegar, Worcestershire sauce alternative, garlic powder, onion powder, chili powder, and cayenne pepper in a mixing bowl. Whisk until smooth and set aside.
  2. Heat olive oil in a non-stick pan over medium heat. Season salmon fillets with salt and pepper. Cook for 2-3 minutes per side until golden brown.
  3. Pour the BBQ sauce around the salmon in the pan and simmer for 3-4 minutes while spooning the sauce over the fillets.
  4. Transfer the pan to a preheated broiler and broil for an additional 2-3 minutes until lightly charred.
  5. Serve salmon over cooked rice with pineapple chunks.
