- 4 pounds beef belly (cubed)
- 1/2 cup light brown sugar
- 2 tablespoons smoked paprika
- 4 teaspoons salt
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon ground black pepper
- 1 cup barbecue sauce
- 3 tablespoons unsalted butter (cubed)
- Heaping handful wood chips (optional but recommended)
Instructions
- Soak wood chips in water for 30 minutes if using.
- Preheat your grill or smoker to 250°F on one side.
