  • 8 tablespoons unsalted butter (softened)
  • 3/4 cup granulated sugar
  • 1 teaspoon finely grated zest from 1/2 lemon
  • 2 large eggs
  • 1 tablespoon fresh lemon juice from 1/2 lemon
  • 3/4 cup blueberries
  • 1/2 cup powdered sugar
  • 1 tablespoon fresh lemon juice from 1/2 lemon
  • 1 teaspoon finely grated zest from 1/2 lemon

Instructions

  1. Preheat your oven to 350°F and prepare an 8” x 8” baking pan with nonstick spray.
  2. Whisk together flour and salt in a bowl; set aside.
  3. In a stand mixer, cream softened butter, granulated sugar, and lemon zest until fluffy.
  4. Beat in eggs one at a time and mix in lemon juice until just combined.
  5. Gradually add the flour mixture and mix until incorporated.
  6. Gently fold in blueberries, then pour batter into the prepared pan.
  7. Bake for 22-25 minutes or until a skewer comes out clean.
  8. Let cool; whisk together powdered sugar, lemon juice, and zest for glaze. Spread over cooled brownies.
