  • 1 cup blueberries (fresh or frozen)
  • ½ cup sugar (adjust to taste)
  • Juice of 45 lemons (approximately ¾ cup)
  • 4 cups water
  • Optional garnishes: mint leaves, lemon slices, blueberries

Instructions

  1. Peel and juice the lemons until you have about ¾ cup of juice; set aside.
  2. In a saucepan, combine half of the lemon peels, blueberries, sugar, and 1 cup of water. Heat over medium until sugar dissolves and blueberries start popping (3-4 minutes). Remove from heat.
  3. Strain the mixture using a fine mesh strainer to obtain a smooth syrup.
  4. In a large pitcher, mix the blueberry syrup with 4 cups of cold water.
  5. Chill in the refrigerator for about an hour before serving.
  6. Serve over ice and garnish with optional mint leaves or lemon slices.
