  • 2 medium heads broccoli (about 1½ pounds; cut into small florets and stems chopped into small pieces)
  • ½ red onion (finely chopped)
  • ½ cup dried cranberries
  • ¼ cup almonds (chopped)
  • ¼ cup seeds (sunflower or pumpkin)
  • ½ packed cup sun-dried tomatoes in oil (cut into strips with scissors or chopped)
  • ½ cup vegan mayo (or regular mayonnaise)
  • ½ cup Greek yogurt (or non-dairy yogurt)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup (or sugar)
  • 1 teaspoon salt (or more to taste)
  • â…› teaspoon black pepper

Instructions

  1. Rinse and dry the broccoli thoroughly. Cut two medium heads into small, bite-sized florets. If necessary, peel and chop the stems. Add all pieces into a large mixing bowl.
  2. Chop the almonds and set aside. In a skillet over medium heat, toast the chopped almonds along with your choice of sunflower or pumpkin seeds for about two minutes. Stir frequently until they turn golden brown. Remove from heat and let them cool.
  3. In a small bowl, whisk together the vegan mayo, Greek yogurt, apple cider vinegar, maple syrup, salt, and black pepper until smooth.
  4. To the bowl with broccoli, add finely chopped red onion, dried cranberries, toasted nuts and seeds, and sun-dried tomatoes. Pour the dressing over everything and gently toss to ensure all ingredients are well coated. Serve immediately or chill in the refrigerator for at least thirty minutes to enhance the flavors.
