  • 1 lb boneless skinless chicken breast
  • 1 tsp sea salt (divided)
  • 1/2 tsp black pepper (divided)
  • 2 tbsp olive oil (divided)
  • 6 cloves garlic (minced)
  • 2 tbsp fresh ginger (minced; or 1/2 tsp ground ginger)
  • 1/2 large onion (diced)
  • 1 large bell pepper (diced)
  • 1 medium head cabbage (chopped or coarsely shredded; ~810 cups)
  • 2 medium carrots (shredded)
  • 1/4 cup coconut aminos (or low-sodium soy sauce)
  • 2 tbsp honey
  • 2 tsp toasted sesame oil
  • 1/4 cup green onions (sliced)
  • 1 tbsp sesame seeds (optional)

Instructions

  1. Season chicken pieces with salt and pepper.
  2. Sear chicken in olive oil until golden brown; set aside.
  3. Sauté garlic and ginger in the same pan.
  4. Add onions and bell peppers; cook until soft.
  5. Mix coconut aminos and honey; add cabbage and carrots.
  6. Stir-fry until vegetables are tender.
  7. Return chicken to the pan; heat through.
  8. Garnish with green onions and sesame seeds if desired.
