  • 2 lbs russet potatoes (peeled and thinly sliced)
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups whole milk (warmed)
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese (shredded)
  • 1/2 cup Parmesan cheese (grated)
  • 2 cloves garlic (minced)
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a medium saucepan over medium heat, melt the butter. Whisk in the flour until lightly golden, then slowly add warmed milk and cream until smooth. Stir in garlic, salt, pepper, and cook until thickened.
  3. Remove from heat and mix in 1 1/2 cups cheddar cheese and 1/4 cup Parmesan until melted.
  4. Layer half of the sliced potatoes in the baking dish, pour half of the cheese sauce over them, add remaining potatoes, then cover with the rest of the sauce.
  5. Sprinkle remaining cheeses on top and bake covered for 40 minutes. Uncover and bake an additional 20 minutes until golden brown.
  6. Let rest for 10 minutes before serving; garnish with chopped parsley.
