Ingredients

Scale
  • 4 cups cooked shredded chicken
  • 1/2 cup diced white onion
  • 2 teaspoons minced garlic
  • 8 burrito-size flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 1 to 2 cups vegetable oil, divided
  • 1/2 tablespoon chili powder
  • 1/4 teaspoon oregano
  • 1/2 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 can (4 ounces) diced green chilies
  • Optional toppings: salsa, guacamole, sour cream

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Sauté diced onion and minced garlic until translucent.
  2. Mix in chili powder, oregano, and ground cumin; stir well.
  3. In a mixing bowl, combine cooked shredded chicken with salt, pepper, and diced green chilies. Add to the skillet and mix until heated through.
  4. Lay a warmed tortilla flat and spoon about 1/4 cup of the chicken mixture onto the center. Sprinkle with cheese, fold sides in, and roll tightly.
  5. For frying: Heat remaining oil in the skillet over medium-high heat. Fry chimichangas seam-side down until golden brown (about 3-4 minutes per side). For baking: Preheat oven to 375°F (190°C). Place seam-side down on a baking sheet, brush with oil, and bake for about 25 minutes until golden.
