Ingredients

Scale
  • 4 boneless skinless chicken thighs (about 1 lb)
  • 2 tablespoons chopped cilantro
  • Juice and zest of 2 limes
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon ground coriander
  • 1 tablespoon oil
  • Tortillas for serving
  • Optional toppings: pico de gallo, cheese, cilantro

Instructions

  1. In a mixing bowl, combine oil, lime juice and zest, cilantro, salt, chili powder, cumin, garlic powder, and ground coriander.
  2. Place chicken in an airtight container or sealable bag and pour the marinade over it. Seal and shake to coat evenly. Marinate for at least 30 minutes (up to two hours for best results).
  3. Preheat your grill or campfire setup until hot.
  4. Remove chicken from marinade and grill for about 5–8 minutes on each side until the internal temperature reaches 165°F. Let rest before chopping into bite-sized pieces.
  5. Assemble tacos by layering grilled chicken into warmed tortillas and adding desired toppings.
