Ingredients
- 8 oz linguine pasta
- 2 boneless skinless chicken breasts
- 2 tsp olive oil
- 2 Tbsp unsalted butter
- 1 1/2 to 2 Tbsp cajun seasoning
- 3 garlic cloves, minced
- 2/3 cup diced tomatoes
- 1 1/2 cup heavy whipping cream
- 1/2 cup grated parmesan cheese
- Fresh parsley for garnish
Instructions
- Cook linguine in salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain and keep warm.
- Prepare the chicken by pounding it to an even thickness and seasoning with Cajun seasoning.
- In a non-reactive skillet, heat olive oil over medium-high heat. Sear chicken until cooked through (165ËšF), then slice into strips.
- In the same skillet, melt butter and sauté garlic until fragrant. Add diced tomatoes and cook for another 2 minutes.
- Pour in heavy cream, stir in remaining Cajun seasoning, and add parmesan cheese. Simmer to combine flavors.
- Add the sliced chicken and cooked pasta to the sauce; mix well and adjust consistency with reserved pasta water if needed.
