  • 8 oz linguine pasta
  • 2 boneless skinless chicken breasts
  • 2 tsp olive oil
  • 2 Tbsp unsalted butter
  • 1 1/2 to 2 Tbsp cajun seasoning
  • 3 garlic cloves, minced
  • 2/3 cup diced tomatoes
  • 1 1/2 cup heavy whipping cream
  • 1/2 cup grated parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Cook linguine in salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain and keep warm.
  2. Prepare the chicken by pounding it to an even thickness and seasoning with Cajun seasoning.
  3. In a non-reactive skillet, heat olive oil over medium-high heat. Sear chicken until cooked through (165ËšF), then slice into strips.
  4. In the same skillet, melt butter and sauté garlic until fragrant. Add diced tomatoes and cook for another 2 minutes.
  5. Pour in heavy cream, stir in remaining Cajun seasoning, and add parmesan cheese. Simmer to combine flavors.
  6. Add the sliced chicken and cooked pasta to the sauce; mix well and adjust consistency with reserved pasta water if needed.
