  • 16 oz rotini pasta
  • 1/3 cup dill pickle juice
  • 2 cups chopped baby dill pickles
  • 8 oz Colby Jack cheese (cubed)
  • 1 small white onion (finely chopped)
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tablespoons chopped fresh dill
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package directions. Add salt to boiling water before cooking.
  2. Once cooked, drain and rinse the pasta with cold water. Place it in a mixing bowl and pour the dill pickle juice over it; stir and set aside.
  3. Chop the dill pickles and cheese into small cubes; finely chop the onion.
  4. Drain the pasta again after letting it sit in pickle juice. Combine with pickles, cheese, and onion in the mixing bowl.
  5. In a separate bowl, mix mayonnaise, sour cream, remaining pickle juice, fresh dill, salt, and pepper to make the dressing.
  6. Pour the dressing over the pasta salad mixture and stir until well combined.
  7. For best flavor, chill in the refrigerator for 1-2 hours before serving.
