  • 2 lb Chuck Roast
  • 2 cups Red or Yellow Onion (thinly sliced)
  • 3 Garlic Cloves (minced)
  • 1 tbsp White Grape Juice Vinegar
  • 1/4 cup Tomato Sauce
  • 1 cup Beef Broth
  • Salt
  • Black Pepper
  • Fresh Thyme

Instructions

  1. In a small bowl, whisk together the tomato sauce, beef broth, minced garlic, thyme, Worcestershire sauce, and white grape juice vinegar.
  2. Season the chuck roast generously with salt and pepper.
  3. Layer half of the onions in the slow cooker, pour half of the sauce over them, place the roast on top, add remaining onions and pour the rest of the sauce.
  4. Cover and cook on high for 4 hours or low for 7 hours until tender.
  5. For gravy, mix cornstarch or flour with cold water before adding it to the sauce; heat until thickened.
  6. Serve over mashed potatoes or rice pilaf.
