  • 9 cups tomato puree
  • 1/2 large red bell pepper (finely chopped)
  • 1/2 cup red onion (finely chopped)
  • 24 tablespoons sugar
  • 1 teaspoon salt
  • 2 1/2 teaspoons dried savory
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon black pepper
  • 1/8 teaspoon red pepper flakes
  • 1 teaspoon citric acid (divided)

Instructions

  1. Wash fresh tomatoes and cut them in half, removing the core. Blend until smooth to create tomato puree.
  2. In a large pot over medium heat, sauté finely chopped red bell pepper and onion until softened (about 5 minutes).
  3. Stir in the tomato puree along with sugar, salt, savory, oregano, basil, black pepper, red pepper flakes, and half of the citric acid. Mix well.
  4. Bring the mixture to a simmer and reduce heat to low. Let it cook uncovered for about an hour, stirring occasionally.
  5. Taste and adjust seasoning as needed before adding remaining citric acid.
