Ingredients
- 9 cups tomato puree
- 1/2 large red bell pepper (finely chopped)
- 1/2 cup red onion (finely chopped)
- 2 – 4 tablespoons sugar
- 1 teaspoon salt
- 2 1/2 teaspoons dried savory
- 2 teaspoons dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon black pepper
- 1/8 teaspoon red pepper flakes
- 1 teaspoon citric acid (divided)
Instructions
- Wash fresh tomatoes and cut them in half, removing the core. Blend until smooth to create tomato puree.
- In a large pot over medium heat, sauté finely chopped red bell pepper and onion until softened (about 5 minutes).
- Stir in the tomato puree along with sugar, salt, savory, oregano, basil, black pepper, red pepper flakes, and half of the citric acid. Mix well.
- Bring the mixture to a simmer and reduce heat to low. Let it cook uncovered for about an hour, stirring occasionally.
- Taste and adjust seasoning as needed before adding remaining citric acid.
