  • Salt & pepper (to taste)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 tablespoons low sodium soy sauce
  • 1/4 cup honey
  • 1/4 cup chicken broth
  • 1/2 tablespoon lemon juice or apple cider vinegar
  • 4 cloves garlic (minced)
  • 1 tablespoon cornstarch
  • Chopped scallions (to taste)

Instructions

  1. Preheat your oven to 400°F.
  2. In a bowl, whisk together soy sauce, honey, chicken broth, lemon juice (or vinegar), minced garlic, and cornstarch until well combined. Set aside.
  3. Cut each chicken breast in half lengthwise and season with salt and pepper.
  4. Heat olive oil and butter in an oven-safe skillet over medium-high heat. Sear the chicken pieces for 4-5 minutes on each side until golden brown.
  5. Pour the prepared sauce around the chicken in the skillet and let it bubble for 30 seconds.
  6. Transfer the skillet to the oven and bake for an additional 4-5 minutes until the chicken is cooked through (165°F) and the sauce thickens slightly.
  7. Serve immediately, garnished with chopped scallions if desired.
