  • 3-pound salmon fillet
  • 14 ounces pineapple tidbits or rings
  • 1/4 cup pineapple juice
  • 2 tablespoons melted unsalted butter or ghee
  • 2 tablespoons sesame oil
  • 1 tablespoon lemon juice
  • 1 tablespoon light brown sugar
  • 1 1/2 tablespoons honey
  • 12 garlic cloves (minced)
  • 1 teaspoon sea salt
  • 1 teaspoon smoked paprika
  • 1/8 teaspoon white pepper
  • 12 tablespoons unsalted butter

Instructions

  1. Preheat the oven to 400°F.
  2. Pat the salmon dry and cut into two pieces.
  3. Line a sheet pan with aluminum foil or parchment paper.
  4. Arrange pineapple on the lined pan and place the salmon on top.
  5. In a mixing bowl, combine remaining ingredients to create the marinade.
  6. Spread the marinade over the salmon, then marinate in the fridge for 15-30 minutes.
  7. Bake in the oven for 25–30 minutes until the internal temperature reaches at least 145°F.
  8. Let rest for 10 minutes before serving.
