Ingredients
- 3-pound salmon fillet
- 14 ounces pineapple tidbits or rings
- 1/4 cup pineapple juice
- 2 tablespoons melted unsalted butter or ghee
- 2 tablespoons sesame oil
- 1 tablespoon lemon juice
- 1 tablespoon light brown sugar
- 1 1/2 tablespoons honey
- 1–2 garlic cloves (minced)
- 1 teaspoon sea salt
- 1 teaspoon smoked paprika
- 1/8 teaspoon white pepper
- 1–2 tablespoons unsalted butter
Instructions
- Preheat the oven to 400°F.
- Pat the salmon dry and cut into two pieces.
- Line a sheet pan with aluminum foil or parchment paper.
- Arrange pineapple on the lined pan and place the salmon on top.
- In a mixing bowl, combine remaining ingredients to create the marinade.
- Spread the marinade over the salmon, then marinate in the fridge for 15-30 minutes.
- Bake in the oven for 25–30 minutes until the internal temperature reaches at least 145°F.
- Let rest for 10 minutes before serving.
