- 1/4 cup grated Parmesan cheese
- 4 oz cream cheese
- 10 oz baby bella mushrooms (sliced)
- 1/4 cup + 2 tbsp unsalted butter
- 4 tbsp olive oil (divided)
- 4 thick slices mozzarella cheese
Instructions
- Preheat the oven to 350°F (175°C).
- Dredge chicken breasts in seasoned flour (flour mixed with garlic powder, salt, and pepper).
- In a large skillet, melt 2 tablespoons of butter over medium heat and brown the chicken on both sides until golden; set aside.
- Sauté sliced mushrooms in the same skillet, adding olive oil and half of the minced garlic until browned; set aside.
- In a deep saucepan, cook onions until translucent, then add spinach and remaining garlic until wilted. Stir in cream cheese and Parmesan until melted.
- Assemble by placing chicken in a baking dish; top with mushrooms, creamed spinach, and mozzarella slices.
