  • 4 boneless skinless chicken breasts
  • 1/2 cup flour
  • 2 tsp garlic powder
  • 1 tsp kosher salt
  • 1/4 tsp pepper
  • 1 bag baby spinach
  • 2 tbsp chopped onion
  • 4 garlic cloves (minced, divided)
  • 1/4 cup grated Parmesan cheese
  • 4 oz cream cheese
  • 10 oz baby bella mushrooms (sliced)
  • 1/4 cup + 2 tbsp unsalted butter
  • 4 tbsp olive oil (divided)
  • 4 thick slices mozzarella cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Dredge chicken breasts in seasoned flour (flour mixed with garlic powder, salt, and pepper).
  3. In a large skillet, melt 2 tablespoons of butter over medium heat and brown the chicken on both sides until golden; set aside.
  4. Sauté sliced mushrooms in the same skillet, adding olive oil and half of the minced garlic until browned; set aside.
  5. In a deep saucepan, cook onions until translucent, then add spinach and remaining garlic until wilted. Stir in cream cheese and Parmesan until melted.
  6. Assemble by placing chicken in a baking dish; top with mushrooms, creamed spinach, and mozzarella slices.
  7. Bake for 20-25 minutes until the cheese melts.
