  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt (plus additional for salted pasta cooking water)
  • ¼ teaspoon ground cumin
  • ¼ teaspoon black pepper

Instructions

  1. Cook the rotini pasta in salted boiling water according to package directions until al dente. Drain and rinse with cold water; set aside.
  2. In a mixing bowl, whisk together mayonnaise, sour cream, olive oil, lime juice, chili powder, smoked paprika, garlic powder, salt, cumin, black pepper, and cayenne until smooth.
  3. Combine the cooked pasta with the dressing in a large bowl. Add thawed corn, cotija cheese, diced red onion, and chopped cilantro; gently toss to combine.
