  • 3/4 cup plus 1 teaspoon sugar
  • 1/4 cup vegetable or canola oil
  • 1/4 cup mild olive oil
  • 2 tablespoon whole milk
  • 1/2 teaspoon almond extract
  • 2 tablespoon cold, unsalted butter
  • 3 small ripe peaches (up to 5), pitted and thickly sliced (about 1/2-inch wide)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine 1 1/2 cups flour, 3/4 teaspoon salt, and 1 teaspoon sugar.
  3. In another bowl, whisk together vegetable oil, olive oil, milk, and almond extract; add to the flour mixture. Mix gently until combined.
  4. Press the dough into an 11-inch tart pan evenly across the bottom and up the sides; trim excess.
  5. In a separate bowl, mix 3/4 cup sugar, 2 tablespoons flour, and 1/4 teaspoon salt with cold butter until crumbly.
  6. Arrange sliced peaches in overlapping circles over the crust; top with crumble mixture.
  7. Bake for 35 to 45 minutes until golden brown and bubbly.
  8. Cool on a rack before serving.
