  • 1 stick (8 tablespoons) salted butter, melted
  • 2 tablespoons honey or brown sugar
  • 1/2 teaspoon cinnamon
  • 1 1/2 cups heavy cream
  • 2 teaspoons pure vanilla extract
  • 8 ounces cream cheese or crème fraîche
  • 34 tablespoons confectioner’s sugar
  • 3 ripe peaches, sliced
  • 2 tablespoons raspberry jam

Instructions

  1. Make the crust by mixing pretzel crumbs, melted butter, honey (or brown sugar), and cinnamon in a medium bowl. Press into a pie plate and bake at 350°F for about 8 minutes. Cool completely.
  2. Prepare the cream filling by beating heavy cream and vanilla until soft peaks form. Add cream cheese and confectioner’s sugar, mixing until smooth. Chill.
  3. Spread raspberry jam over the cooled crust and layer the cream filling on top. Chill for at least 6 hours or overnight.
  4. For honeyed peaches, simmer honey, mix in peach slices, and let cool before serving atop the pie.
