  • 400g leftover pulled beef
  • 1 red pepper, diced
  • 250g macaroni pasta (uncooked)
  • 4 tablespoons barbecue sauce
  • 90g cheddar cheese
  • 50g mozzarella cheese
  • Salt and black pepper to taste
  • 2 tablespoon of tomato purée
  • 1 teaspoon smoked paprika
  • 1/2 cup (120ml) of pasta water
  • Low calorie spray

Instructions

  1. Preheat your oven to 160°C fan (180°C/350°F).
  2. Cook the macaroni in boiling salted water until al dente. Drain and reserve ½ cup of pasta water.
  3. In an oven-proof dish, mix the cooked pasta, pulled beef, diced pepper, barbecue sauce, and reserved pasta water. Season with salt and pepper.
  4. Sprinkle cheddar and mozzarella cheese on top.
  5. Bake for about 25 minutes until the cheese is melted and golden.
