  • 2 tablespoons butter
  • 1 pound ground turkey
  • 1 ½ cups cheddar cheese (shredded)
  • 4 soft tortillas (small, taco size)
  • 4 eggs

Instructions

  1. Prepare toppings of your choice and set aside.
  2. Preheat your Blackstone Griddle over medium-high heat.
  3. Divide the ground turkey into four equal portions. Spread one portion evenly over one side of each tortilla.
  4. Melt half the butter on the griddle, then place the tortillas meat-side down.
  5. Cook for about 3-4 minutes until golden brown; flip and top each with shredded cheese and cook for another 3 minutes or until fully cooked.
  6. Remove tacos from heat; melt remaining butter on the griddle and fry the eggs to your liking.
  7. Assemble tacos by placing an egg on each and folding in half.
  8. Serve immediately.
