  • Mustard or hot sauce (as binder)
  • Heavy pepper rub
  • 2 large onions (sliced)
  • 46 jalapeños (sliced)
  • Butter
  • Shredded Jack and Gouda cheese
  • Hoagie buns
  • Your favorite BBQ sauce

Instructions

  1. Trim the brisket and apply mustard or hot sauce as a binder. Season generously with a heavy pepper rub. Refrigerate for a few hours.
  2. Preheat your smoker to 220°F. Place the brisket in the smoker with a drip pan underneath and smoke overnight until it reaches an internal temperature of 165-170°F.
  3. After smoking, wrap the brisket in foil or butcher paper and place it in a cooler for at least 2 hours to rest.
  4. Slice onions and jalapeños, then sauté them in butter with salt and pepper on a griddle until caramelized.
  5. Slice the rested brisket thinly against the grain, focusing on meat from the point for maximum tenderness.
  6. Cook sliced brisket on the griddle until crispy, then add cooked vegetables and BBQ sauce; mix in shredded cheese until melted.
  7. Assemble by placing cheesesteak mixture in toasted hoagie buns.
